Ingredients:
1 pound lean bacon or smoked pork shoulder
3 quarts of water
Freshly ground pepper to taste
Salt to taste
3 pounds turnip, collard or mustard greens, trimmed, rinsed, chopped
Procedure:
1. Place the bacon and water in a large saucepan.
2. Season with pepper.
3. Bring to a boil.
4. Cover and reduce the heat.
5. Simmer for 1 hour.
6. Season with salt and pepper.
7. Add the greens.
8. Simmer, uncovered, for 15 to 17 minutes or until tender.
Serves six people.
