1 unbaked pie shell (9-inch)
6 Tablespoons white sugar
2 Tablespoons brown sugar
1/2 Tablespoon flour
1/2 cup butter
2 eggs
1/2 teaspoon vanilla
1/2 cup white syrup
1/2 cup chocolate chips
1/2 cup pecans

Ingredients:
1/2 cup margarine
3 Tablespoons flour
1 medium onion, finely chopped
1/2 bell pepper, finely chopped
1/2 cup finely chopped celery
2 small pods garlic, finely chopped
1 cup canned chicken broth
2 pounds crawfish meat with fat that clings to them
1-1/4 teaspoons salt
1/4 teaspoon red pepper
Worcestershire sauce to taste
4 green onions, tops and bottoms, finely chopped

Grasshopper Pie

Ingredients:
14 chocolate Oreo cookies
2 Tablespoons margarine, melted
24 marshmallows
1/2 cup milk
Dash of salt
4 Tablespoons green creme de menthe
2 Tablespoons white creme de cocoa
1/2 pint whipping cream, whipped
Grated bitter chocolate

Procedure:
1. Crush cookies.
2. Mix with melted margarine.
3. Press into 8-inch pie plate.
4. Melt marshmallows in milk over very low heat in heavy pot.
5. Add dash of salt.
6. Remove from heat and let cool.
7. Stir in creme de menthe and creme de cocoa.
8. Fold in whipped cream and pour into prepared pie shell.
9. Sprinkle grated bitter chocolate on top.
10. Put in freezer, leave until ready to serve, and serve frozen.
11. This will keep frozen for a long time.

Serves eight people and a great companion while you watch UFC 113 live stream this weekend.

Apple Cobbler

Ingredients:
Pastry for 1 pie shell
7 cups peeled, sliced apples
3/4 cup sugar
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
1/4 teaspoon cinnamon
2 tablespoons butter

Procedure:
1. Place apples in 8 x 12-inch or 9 x 9-inch baking dish.
2. Sprinkle apples with remaining ingredients sand dot with butter.
3. Top with rolled pie crust. Pierce with knife and bake.
4. Bake at 350 degrees for 1 hour.

Serves eight people. And something that would really be good to eat while watching the WEC 48 live stream online.

Chess Meringue Pie

Ingredients:
9-inch pie crust, unbaked
5 eggs (separate 2 whites for top)
1/8 teaspoon salt
2 Tablespoons heavy cream
1/3 cup butter, melted
1 cup sugar
1 Tablespoon corn meal
4 Tablespoons sugar

Procedure:
1. Beat eggs and egg yolks.
2. Add salt, cream, melted butter, 1 cup sugar and corn meal.
3. Mix well.
4. Pour in unbaked pie shell.
5. Bake at 350 degrees until almost set (about 30 minutes).
6. Beat 2 egg whites stiff and add 4 Tablespoons sugar.
7. Spread on top of pie. Bake until lightly browned.

Serves eight people.

Crab Quiche

Ingredients:
1 package (6 ounces) king crab meat
1/2 pound fresh mushrooms, sliced
2 Tablespoons butter
4 eggs
1 cup sour cream
1 cup small curd cottage cheese
1 cup grated Parmesan cheese
1/4 cup flour
1 teaspoon onion powder
1/4 teaspoon salt
4 drops hot pepper sauce
2 cups shredded Monterey Jack cheese

Procedure:
1. Thaw and drain crab meat.
2. In a medium-sized skillet, saute mushrooms in butter until tender. Drain. Set aside.
3. In blender, mix next eight ingredients.
4. Fold in mushrooms, Jack cheese, and crab meat. Pour into 10-inch quiche dish.
5. Bake at 350 degrees for 45 minutes until golden brown, or until knife inserted in center comes out clean. Let stand 5 minutes before cutting.

Serves six people.

Lemon Icebox Pie

Ingredients:
9-inch pie shell, baked
4 egg yolks
2/3 cup sugar
Pinch of salt
4 Tablespoons lemon juice (more for tart flavor)
Grated rind of 2 lemons
3/4 Tablespoon unflavored gelatin
1/3 cup cold water
4 egg whites
2/3 cup sugar
1/2 pint cream, whipped
Lemon slivers

Procedure:
1. Place egg yolks, 2/3 cup sugar, salt and lemon juice in top of double boiler; cook over boiling water, stirring until thick; add lemon rind and gelatin which has been soaked in cold water for 5 minutes.
2. Let mixture cool.
3. Beat egg whites until stiff; slowly add 2/3 cup sugar.
4. Beat until creamy.
5. Fold egg whites into cooled lemon mixture.
6. Place in baked pie shell, sky-high; chill at least 6 hours or overnight.
7. Top with whipped cream.
8. Garnish with lemon slivers.

Pumpkin Pie

Ingredients:
3 Tablespoons butter
1-1/3 cups firmly packed light brown sugar, divided
1/3 cup chopped walnuts
1 unbaked 9-inch pastry shell
1-3/4 cups pumpkin
2 cups milk or cream
1/4 cup granulated sugar
3 eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon ginger
2 teaspoons cinnamon
1/2 teaspoon allspice

Procedure:
1. Preheat oven to 450 degrees.
2. Combine butter, 1/3 cup brown sugar, and walnuts.
3. Sprinkle over unbaked pastry shell.
4. Bake 10 minutes.
5. Combine pumpkin, 1 cup brown sugar, and remaining ingredients; mix well.
6. Pour into partially baked shell.
7. Reduce oven heat to 325 degrees and bake 45 minutes.

Serves eight people.

Apple Custard Pie

Ingredients:
CRUST:
1-3/4 cups all-purpose flour, sifted
1/4 cup granulated sugar
1 teaspoon cinnamon
2/3 cup butter
1/4 cup water

FILLING:
1 egg
1-1/2 cups sour cream
1 cup granulated sugar
1/4 cup all-purpose flour
2 teaspoons vanilla extract
1/2 teaspoon salt
2-1/2 pounds Macintosh apples, pared, quartered, cored and sliced

TOPPING:
1/2 cup butter, room temperature
1/2 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup brown sugar, firmly packed
3 teaspoons cinnamon
1 cup walnuts, coarsely chopped

Procedure:
CRUST:
1. In a large bowl, combine flour, sugar and cinnamon.
2. Cut in butter with a pastry blender until mixture has the consistency of coarse meal.
3. Sprinkle in just enough water to moisten dough.
4. May add additional water if necessary to form ball.
5. Preheat over to 450 degrees.
6. Roll out dough on a lightly floured surface to a 12-inch diameter circle.
7. Fit into a 10-inch pie plate.
8. Fold under overhanging pastry flush with rim.
9. Flute to make a stand-up edge.
10. Chill until ready to fill.

FILLING:
1. In a large mixing bowl, beat egg slightly.
2. Stir in sour cream, sugar, flour, vanilla and salt until mixture is smooth.
3. Add sliced apples, stirring gently just to coat apples.
4. Spoon filling into shell.
5. Bake at 450 degrees for 10 minutes, lower heat to 350 degrees and bake 35 minutes longer.
6. While pie bakes, prepare topping.

TOPPING:
1. In a small bowl, combine butter, flour, sugar, brown sugar, cinnamon, and walnuts and blend well.
2. Remove pie from oven and sprinkle topping evenly over filling.
3. Return to oven.
4. Bake for 15 minutes longer or until topping is lightly browned.
5. Cool pie on wire rack.

Serves eight people.

Chocolate Pecan Pie

Ingredients:
9-inch pie crust, unbaked
2 squares bitter chocolate
3 Tablespoons butter
1 cup light corn syrup
3/4 cup sugar
3 eggs, slightly beaten
1 teaspoon vanilla
1 cup coarsely chopped pecans
1/2 cup cream, whipped

Procedure:
1. Melt chocolate and butter over hot water.
2. Combine syrup and sugar in saucepan.
3. Bring to boil over high heat, stirring until sugar is dissolved.
4. Boil 2 minutes.
5. Add chocolate mixture.
6. Pour slowly over eggs, stirring constantly.
7. Add vanilla and nuts.
8. Stir to mix well.
9. Pour into unbaked pie shell.
10. Bake at 375 degrees for 45 to 50 minutes.
11. Cool.
12. Top with unsweetened whipped cream.

Serves eight people.

Easy Eggs Creole

Ingredients:
2 onions, thinly sliced
2 green peppers, finely chopped
2 cups celery, finely chopped
2 Tablespoons butter
1 can mushrooms, drained
1 can tomatoes, drained
2 Tablespoons flour
8 eggs, hard-boiled and sliced

White Sauce:
4 Tablespoons flour
2 cups milk, divided
4 Tablespoons butter
1 cup grated sharp Cheddar cheese

Procedure:
1. Saute onions, green peppers, and celery in butter.
2. Add mushrooms and tomatoes.
3. Add flour, and stir until thickened.
4. Arrange mixture alternately with sliced hard-boiled eggs in a baking dish.
5. Set aside.

White Sauce:
1. In a jar, mix flour and 1/2 cup milk.
2. In a saucepan, heat butter and remaining milk until butter is melted.
3. Stir in flour mixture, and cook over medium heat until thickened.
4. Pour white sauce over top of eggs and sprinkle with Cheddar cheese.
5. Bake at 350 degrees for 30 minutes

Serves eight people.

Ingredients:
1 unbaked pie shell (10-inch)
1/2 cup butter
5 eggs
3 cups packed brown sugar
1/2 cup cream or milk
1 teaspoon vanilla
Pinch of salt

Procedure:
1. Cream butter, eggs, and sugar.
2. Add remaining ingredients.
3. Mix until smooth.
4. Pour into pie shell.
5. Bake at 325 degrees for 25 to 40 minutes.

Serves 8 people.

Ingredients:
1 large bowl of freshly grated cassava
1/4 cup sugar
1/2 teaspoon vanilla
1/2 can coconut milk
1/2 cup butter
1/2 can condensed milk
grated cheese

Procedure:
1. Mix sugar and butter until smooth.
2. Add the cassava and coconut milk.
3. Add vanilla and stir.
4. Bake for 30 minutes at 400 degrees.
5. Pour the condensed milk on top of the cassava cake
6. Sprinkle the grated cheese on top.
7. Place back in the oven and brown the topping.

Serves six people.

1/8 teaspoon nutmeg
1 teaspoon vanilla extract

Ingredients:
1 baked, 9-inch pastry shell
3 ounces cream cheese, softened
1/4 cup lemon juice
1 cup whipping cream
1/2 cup sugar
2 cups whole, fresh strawberries, stems removed
1 cup currant jelly

Procedure:
1. Mix cream cheese and lemon juice.
2. Whip cream and add sugar gradually.
3. Fold whipped cream into cream cheese mixture.
4. Spread onto cooled, baked pastry shell.
5. Arrange strawberries upright over whipped cream mixture.
6. Melt jelly and pour over strawberries.
7. Refrigerate until set, at least 2 hours.

Serves eight people.

Ingredients:
2 cups blueberries
1/4 cup lemon juice
1/4 cup butter
1-1/2 cups sugar
1/2 cup milk
1 cup flour
1 teaspoon of baking powder
1/2 teaspoon salt
1 tablespoon of cornstarch
1 cup water

Procedure:
1. Grease an 8-inch pan with butter.
2. Put the blueberries and pour over the lemon juice.
3. Cream the butter and slowly add 1/2 cup of sugar.
4. Add the milk, flour, baking powder and 1/4 teaspoon of salt.
4. Mix thoroughly.
5. Spread mixture over the blueberries.
6. Sprinkle the remaining sugar, salt and cornstarch. Set aside.
7. Boil the water.
8. Slowly pour the water over the blueberry mixture pan.
8. Bake in 375 degrees for an hour.
9. Serve with cream on top and coffee.

Serves six people.

Bacon and Mushroom Quiche

Ingredients:
1 8-inch unbaked pie shell
1/2 cup heavy cream
8 ounces cream cheese
1 egg
3 egg yolks
1/4 teaspoon salt
1/4 teaspoon pepper
6 slices bacon
4 ounces chopped mushrooms

Procedure:
1. Beat the cream cheese, heavy cream, eggs, yolks, salt and pepper.
2. Cut the bacon into square pieces and fry until light brown. Drain.
3. Put bacon and mushrooms inside pastry shell.
4. Pour cheese mixture inside.
5. Bake for 20 minutes at 400 degrees.
6. Bake for another 10 minutes at 350 degrees.

Serves four to six people.
