Ingredients:
1/4 cup orange juice concentrate
1 cup non-fat milk
2 eggs, yolk and white separated
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon vanilla
2 tablespoons flour
1/4 teaspoon salt
Procedure:
1. Beat egg whites until stiff.
2. Slowly add 2 tablespoons of sugar.
3. Cream margarine with remaining sugar until fluffy.
4. Beat in the egg yolks with the orange juice and vanilla.
5. Stir in flour and salt.
6. Slowly stir in milk.
7. Fold in the egg whites slowly until fluffy and smooth.
8. Put in 6 buttered 6-ounce cups.
9. Set in shallow pan of boiling water.
10. Bake at 325 degrees for 30 minutes.
Makes six cupcakes.
